Ingredients
  

MEATBALLS
  • 1½ lbs ground beef
  • ½ lb ground pork
  • 1 large egg beaten
  • ¼ cup tomato sauce
  • ½ sweet onion finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • ½ teaspoon basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup plain breadcrumbs or crushed saltine crackers for a pantry-friendly swap
  • 1 tablespoon olive oil
TOPPERS
  • 5 slices provolone or mozzarella cheese cut into fourths
  • ½ cup marinara or pizza sauce

Method
 

  1. Preheat oven to 375°F. Coat a rimmed baking sheet with nonstick cooking spray.
  2. In a large mixing bowl, combine ground beef, ground pork, beaten egg, tomato sauce, onion, garlic powder, oregano, basil, salt, pepper, and breadcrumbs. Mix until just combined, avoiding overworking the meat.
  3. Scoop and shape into 1½-inch meatballs (about the size of golf balls). You should get around 20 meatballs. Arrange them evenly on the baking sheet.
  4. Brush the tops with olive oil and bake for 20–25 minutes, or until the internal temperature reaches 165°F.
  5. Remove from oven and top each meatball with a spoonful of marinara and a piece of cheese.
  6. Turn oven to broil and return meatballs to the oven for 2–3 minutes, just until the cheese melts and bubbles.
  7. Serve immediately with toothpicks and extra marinara on the side.

Ingredients
  

  • 5 tablespoons butter
  • 1 apple - peeled cored, and chopped
  • 1 small onion chopped
  • 1 celery stalk diced
  • ½ cup chopped walnuts
  • 1 cup unsweetened applesauce
  • 1 ½ cups water
  • 5 cups coarse dry breadcrumbs
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • Kosher salt and fresh ground pepper to taste
  • 1 3 pound boneless rolled pork loin roast

Method
 

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Melt the butter in a medium saucepan over medium heat. Stir in the apple, onion, celery, and walnuts, and cook 5 minutes, until vegetables are tender. Mix in the applesauce, water, and breadcrumbs. Cook and stir until the breadcrumbs have absorbed the liquid. Season with cinnamon, kosher salt, cloves, nutmeg, and ginger.
  3. Unroll the pork roast, and place in a baking dish. Season with salt and pepper to taste. Spoon the stuffing mixture over the roast. Arrange any excess stuffing around the roast. Roll the roast so that the fatty side is on top, and tie with kitchen twine.
  4. Bake 45 to 50 minutes in the preheated oven, to an internal temperature of 145 degrees F (63 degrees C).

Hot Honey Bacon Crostini

Ingredients
  

  • 1 baguette sliced into ½-inch rounds
  • 6 slices thick-cut bacon
  • 6 oz goat cheese softened
  • 1 tbsp cream cheese optional, for extra creaminess
  • Hot honey store-bought or homemade
  • Fresh parsley optional garnish
  • Black pepper to taste

Method
 

  1. Cook the bacon: Bake or pan-fry until crispy. Reserve the rendered bacon grease. Let bacon cool, then chop into small bits.
  2. Toast the crostini: Preheat oven to 400°F. Brush baguette slices with bacon grease and bake for 8–10 minutes until golden and crisp.
  3. Make the spread: Whip goat cheese with cream cheese (if using) until smooth. Season with a pinch of black pepper.
  4. Assemble: Spread whipped goat cheese on each crostini. Top with chopped bacon and drizzle generously with hot honey. Garnish with herbs if desired.

  • 8 cups Popcorn Plain
  • 3 tbsp Butter or Vegan Alternative
  • 1 tsp Smoked Paprika
  • 1 tbsp Lemon Zest
  • ½ tsp Garlic Powder
  • 1 tbsp Dried Herbs any combination of rosemary, thyme, basil
  • ½ tsp Salt

Equipment

  • 1 Microwave

Method
 

  1. Mix seasonings, herbs, and butter in a microwave-safe bowl.
  2. Microwave at 10-second increments until your herb butter mixture is melted.
  3. Place popcorn in a large bowl, pouring over your melted herb butter mixture.
  4. Mix well until all kernels are evenly coated. Add additional seasonings to your taste.
